Emmanuel is a craftsman of “Auvergne style”, knife-cut sausages. They are produced from free-range pork, fed on cereal, born and raised in France. No sodium nitrite, no chemical products and no preservatives. “There is no secret and no mystery” …says Emmanuel, who produces fresh sausages using only the noble parts of the pork, Millac salt, spices, natural wine and a good old sharp knife. He has a unique “savoir-faire” and has become a reference in his domain and is praised by many chefs.
