These Andalousian green olives descend fron an ancestral kind, nearly "forgotten" and cultivated in sustainable agriculture by a family of producers for generations. Picked manually and canned during the day, they offer an incomparable freshness and minerality. Our olives come from ancient trees that grow in the heart of a fragile ecosystem that we value to be preserved.
The bitterness is removed using traditional methods which has been followed since the Middle Age Moor Tradition. The Olives are cut handly one by one and debittered by macerating in a marinade of local products with garlic, red peppers, oranges and carrots.
