Sainte Maure de Touraine is made from goat milk and has a cylindrical shape. Because it was copied for a very long time, Sainte Maure producers now engrave the A.O.P and their cheesemaker identification numbers on the straw with a laser. The cheese has a fine, tender texture that can be matured between 15 and 20 days, which it will develop floral and sour hints when aging.
