Albacore white tuna is the most qualitative and sought-after species in gastronomy, along with bluefin tuna. It is fished off the Bay of Biscay and Cantabria, from spring to autumn. The fish is then worked by hand and canned fresh, in the form of brine, using the same craftsmanship as since ancient times.
The belly, which represents only 3% of the total mass of the fish, is the thinnest and tastiest piece of tuna. Triangular in shape, this part is located in the ventral part. It is a particularly fatty piece, which offers an intense and delicate aromatic persistence at the same time. Its fats are also recommended in many diets.
