Pan Seared Black Pudding
with Apples and Baby Greens
Ingredients :
• 2 medium sweet apples, peeled and sliced
• 1 large onion, thinly sliced
• 2 tbsp of premium unsalted butter
• 2 tbsp of brown sugar
• 1 tsp of freshly chopped thyme
• Salt and freshly ground black pepper, to taste
• 2 tbsp of vinegar
• Fresh parsley, finely chopped for garnish
Optional: Serve with artisanal crusty bread or homemade mashed potatoes

Method :
1. Place the boxes in the refrigerator at 2 °C for at least 3 hours. At mealtimes, open both sides. Push.
2. Cut 1.5 cm thick pieces.
3. Immediately, sear them in a very hot, lightly oiled pan or a la plancha, a minute and a half on each side. They should be slightly crispy.
