The saffron mustard is both delicate and subtle. It will sublimate a fillet of fish or a pan-fried scallop. The mustard is made with French seeds which are crushed with a stone mill and then sieved in order to remove the rind of the mustard. It is then associated with a cider vinegar and a finely selected producer white wine.
